I got this recipe from a very lovely english lady I met in Florida, who made it for an informal dinner party we had.. Very easy to make, and everyone just loved it! am making it today for the holiday weekend.








Ingredients

1 box White Cake Mix ), prepared as directed
1/2 tsp almond extract
1 can Coconut Milk
1 container Cool Whip
2-3 cups flaked sweetened coconut


Directions

Prepare cake mix as directed (adding almond extract) and bake in a lightly greased 13 x 9 pan.
Once out of the oven, LIBERALLY poke holes in cake with a service fork (or straw).
Shake can of coconut milk well, and slowly pour over cake, allowing holes to fill with liquid.

In a large bowl, combine cool whip and coconut and ice cake.
Allow to cool and serve. Makes 24 servings.

Note: I like to reserve a few tablespoons of coconut milk to add to icing mix...
