I want to buy a wok but am not sure which kind is best. Stainless steel or triple ply carbon steel is the question. And if stainless steel is best does it still need to be seasoned. And tips for seasoning woks would be appreciated. I hear they don't sell cast iron ones anymore but they were best if a bit unwieldy. thanks in advance bouquet

When you buy your wok, it should have directions for seasoning.
I don't know if I'm doing it right, but I never use soap in mine, just wash it good with hot water and it's good to go next time.
I love my wok....same with cast iron.

Go with the carbon steel... you will need to season it too, to retain the "patina" you should never use detergents on it....

I never was sure what 'patina' was. Mine is carbon steel and it has aquired a brownish look to it. Never sticks. Is that patina?

So after looking on the web: carbon steel triple ply and season well and rust is the enemy! apparently
