This recipe is awesome, just get some tortillas at Safeway and voila!....
Mexican meat
Los ingredientes...
2 roasts, about 1½ pounds each, one pork and one beef. (can be 3 inexpensive cuts, but avoid those with a lot of fat).
2 tablespoons shortening.
3 cups of chopped onions.
14 ounce can of chopped green chiles.
14 ounces of green chili salsa.
¼ tsp. garlic powder.
4 TBS flour.
4 tsp. salt.
1 tsp. ground cumin.
Juices from roasts.
Heat oven to 200F (95C).
Place both roasts in large Dutch Oven. Do not add salt or water.
Cover tightly and roast about twelve hours until well done.
Drain the meat, reserving the juices. Cool the meat, remove from bone, shred
and set aside.
Chill reserved juices in refrigerator until fat congeals on the top of the liquid. Re
move and dispose of the congealed fat.
Melt the shortening, add onions and green chiles. Sauté until the onions are
transparent, then add the salsa, garlic powder, flour, salt, and cumin.
Cook for 1 minute over medium-low heat.
Stir in the reserved meat juice and shredded meat.
Cook until thick, about five minutes.
Can be used immediately for chimichangas, taco's, etc. or frozen. (will keep for
up to six months in the freezer)
