Following the praise I received for recent recipes, I would like to post this one for the ever popular RAGU. There are many ways to cook ragu. The ingredients are few and the method simple. The amounts stated here are for 4 - 6 people. For lonely batchelors, simply adjust accordingly.laugh

Ingredients:

-extra virgin olive oil (always use good quality oil in Italian cooking).

-200g minced pork.

-200g minced veal.

-onion.

-tomato sauce (homemade is best).

-1/4 stock cube.

-Tagliatelle.

-salt.

-grana padano cheese.


method:

Sauce: app. 40 - 60 minutes (longer the better)

chop onion.
put a little oil in a pan and cook onion for 2 minutes.
put meat into the pan and brown, stirring constantly - approx. 10 mins.
put tomato sauce into the pan.
stir and simmer everything on very low flame for 40 - 60 minutes.
keep a constant check on simmering. If dry, carefully add water.
when near end of simmer time, stir in 1/4 stock cube mixed in a little water.

Tagliatelle: (app. 10 mins)

when sauce is 10 mins from cooking time, prepare tagliatelle.
put 1 - 1 1/2 litres water in large pan and bring to boil.
add 1/2 dessert spoon salt and boil 2 minutes more.
turn flame to simmer and cook tagliatelle as per pack instructions.

when tagliatele is cooked, drain and serve onto warmed plates, add ragu sauce and sprinkle over grana padano.

Hi DF, scrumptious chocolate in Valencia is difficult. However, at great risk of being slaughtered for posting a batchelory type reply, you could try this:

nougat bar cut into small pieces

bar of milk chocolate or two.

butter.

vanilla essence dancing



method.

put water in pan a boil. place saucer on pan and chocolate in saucer.
melt chocolate very slowly.

add a little butter to the chocolate to make creamier texture.

add a drop or two of vanilla essence.

make nougat into small balls.

coat nougat balls with chocolate.

place chocolate-covered nougat balls on greaseproof paper in freezer to harden.


when hardened, eat covered in Kalua and vanilla ice-cream.

(Note: for the nougat you might be able to use some sort of local turron. I know it's not Christmas.)
