Worked in Kilmeaden, where they make the cheddar... same batch, split in two, touch of food dye added to the 'red' to give it the colour.
They are obviously very different if they taste very different.. Thats like saying a mars is the same as a snickers just because you add in nuts. Well their not!!
But personally i like red as it is a stronger cheese.. But i prefer grated white on pasta and spag bol..
