I haven't tried diving in New Zealand, but I have tried it in the Red Sea in different cities, and it's very enjoyable and safe.. and the sea water is warm most of the year.
It doesn't dry the skin.. I have tried it more than once It contains rock salt that is the size of a really huge crystal Indeed these caves are rare around the world
