I just tried this fried rice recipe my american friend created & sent me. You've probably made something similar. It's fairly quick and certainly satifying. Here goes!

*Must have a large wok, or a new one of those non-stick teflon pans.

1. Lightly flour and salt 1 pound of 1 inch sized pieces of beef, pork, chicken, fish or shrimp. Then stir fry pieces until done in very lightly oiled pan. When done, place pieces on several napkins to soak out any excess oil (I used chicken pieces).

2. Stir fry 1/2 cup thinly sliced, diced or cubed potatoe pieces about 1/2 inch in sized until done to your taste preference (I like mine lightly golden brown on the edges [remove from pan and place on a couple napkins to absorb any excess oil.])

3. Combine and stir fry (to your taste preference [I like mine slightly soft on the outside]) about a 1/2 cup of brown onion and broccolli each chopped into about 1/2 inch sized pieces in lightly oiled pan. When done, drop in 2 eggs and go to step 4.

4. Stir fry/scramble 2 eggs into small pieces. Leave in pan and combine previously cooks items as well as about 3 to 5 cups of rice from a rice cooker that has already been cooked, and about a quarter cup of finely diced carrot pieces.

5. Sprinkle in a dash (about 1/2-3/4 teaspoon of each) salt, pepper, and mix well in pan. *Very little heat is necessary at this time since all items have pretty much already been cooked. This is mostly a mixing process.

6. A few bean sprouts can be added, as well as a couple teaspoons of soy sauce, or a teaspoon of butter or margerine if desired, but they're not required for a delicious meal. Enjoy with an iced or chilled, tall glass of your favorite beverage, or water! danceline wine wine

Vegetarian fried rice:

Take a deep frying pan, several cups of steamed Basmati rice, corn oil, an onion, a raw egg and vats of diced leftover vegs or whatever vegs you have around, soy sauce and water.

Cover the bottom of your nonstick huge frying pan with oil. Dice half an onion and throw it in. add a little rice. Crack the egg in a bowl and mix it up with a fork. Throw it on top of the rice and scramble it until it's fully cooked. Then, slowly add the rest of the rice and vegetables stirring constantly. Mix soy sauce with water and add mixing until rice is light brown. Eat with a lot of salt.

Spanish rice. Start with oil, red peppers, onions and rice. Add premade spaghetti sauce and V8 or picante dip until it tastes right. Also, a can of stewed or diced tomatoes. Serve with salt, sour cream, diced olives, chives or whatever.

I eat a lot of rice.
