One of my bosses raises chickens for their eggs. Because he gets more than he needs, he has been giving them away. I'm finding that I prefer them over the store bought. I have read that they are lower in cholesterol which is one good thing considering my history of heart disease.
I'm slap bang in the middle of an Industrial town so no farms near me. I buy free range eggs from the supermarket. Only because I feel sorry for the battery chickens. Dunno if free range are lower in cholestorel though.
Im a lead chef, the only problem with farm fresh eggs is they arnt regulated, anything bought in a store has to be. Also most eggs purchased in the store are pumped with additives to make the best egg. The additives are not, bad mostly vitamins. Then you get eggs in the store you can buy. Most baking doesnt involve a pretty egg so you can buy any standard if its just going into a mix. At EVERY restaurant i worked at they buy pasteurized eggs.

no wonder chickens are on strike they just can't handle larger eggs. too painful
I had 100 chickens at one time, never ate any eggs i always gave them to friends who lived in the city, they liked getting them because they said eggs at the warehouse sit for weeks at a time before they even make it to the store shelves, I had the easter egg chickens (Araucanas, Ameraucanas) they layed blue , greeen eggs that i was told they are lower in cholesterol as well, I never did research it , just liked the chickens because they kept most of the bugs taken care of around the yard
