To be honest we have this problem big time over here in the UK with regards to referring to it as 'Merry Christmas' due to the OTT PC fear of offending people, but Happy Holidays hasn't really been put forward as a replacement either. (Seasons Greetings tends to be pupular though)
My solution...when in doubt, combine the two...
i.e. Happy Holidays + Merry Christmas = 'Happy Christmas'
