2 cups small pasta shells
1/2 pound boneless skinless chicken breasts, cut into 3/4-inch cubes
2 tablespoons olive oil, divided
1 medium onion, chopped
1 medium carrot, finely chopped
1 celery rib, chopped
1 package (12 ounces) frozen fully cooked Italian meatballs, thawed
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup reduced-sodium chicken broth
2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
3/4 cup shredded Asiago cheese

1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute chicken in 1 tablespoon oil until no longer pink; remove and keep warm.
2. In the same skillet, saute the onion, carrot and celery in remaining oil until tender. Add the meatballs, soup, spinach, broth, thyme, salt, pepper and reserved chicken; cover and cook for 4-6 minutes or until heated through.
3. Drain pasta; stir into skillet. Sprinkle with cheese.

1/4 cup all-purpose flour
2 teaspoons minced fresh parsley
1-1/2 pounds turkey breast tenderloins, cubed
2 tablespoons olive oil
1/2 cup chicken broth
1 cup sliced fresh mushrooms
1 medium onion, chopped
4 garlic cloves, minced
1/2 medium green pepper, chopped
1 can (14-1/2 ounces) beef broth
3/4 cup tomato puree
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried basil
1 bay leaf
1/4 teaspoon salt
1/8 teaspoon pepper
Hot cooked fettuccine or spaghetti
Parmesan cheese, optional

1. Combine flour and parsley; add turkey and toss to coat. In a skillet, brown turkey in oil until no longer pink; remove with a slotted spoon and set aside.

Stuffed chicken brest

If your looking for a quick meal this is the one for you.
You will need a large chicken breast... one jar of turkey gravy and one box of stove top stuffing.

Ingredients

For two people.....
2 large chicken breast
1 box stove top stuffing
1 small or medium square baking pan
one large jar of turkey gravy

OK here goes Turn the oven on 375 to heat up now Wash the chicken breast off with cold water do not use hot water set it aside wash your hands off.
now take a med small pan for the stove top stuffing read the box to see how much water to boil for that size box.
put the right amount of water in the pan bring to a boil
While your waiting for the water to boil get your chicken breast ready lay them flat cut from the side of the breast called butterflying open it up once cut.
ok now once the water has boiled add your stuffing into the pan and mix it up don't let it be to dry ok should be nice and moist once it is done..... put the chicken in the square pan and put the stuffing in the chicken breast don't worry about over loading it we want it that way more flavor mmmmmmm fold the chicken breast over to close it. once you got that done wash your hands ok now take the jar of turkey gravy and pour it all over the chicken breast now cover in foil and put it in the oven for 30 minutes. do not over bake!

Best served with real mashed potatoes and fresh veggies and hot dinner rolls
all said and done one hour meal

Italian Garlic rolls...

Marcella's Italian restaurant in the 1970's was a favorite place to eat.
Located near North Miami High School, it was the place to congregate after football games.
Her pizza was great but people raved about the garlic rolls.
Some places call them garlic knots because they are strips twisted into the shape as opposed to rolls that are just one lump of dough. The knot shape allows the spices to get into the roll and not slide off it.

Italian Garlic rolls Recipe

Ingredients

You can cheat and buy Pillsbury pizza dough in the refrigerator case of the local grocery store. That gets the look you want but not the flavor. I suggest going to a pizza shop and buying ready made dough for around the same price. A friend of mine worked there on weekends and told me the recipe. I've since found it listed on a nostalgia website and it's nearly identical.

The recipe is for a dozen medium rolls.

4-8 large cloves of fresh garlic. I prefer grating them but minced works well.
(avoid the store bought garlic in jars as it's got chemicals that completely change the flavor)
3 tablespoons of dried parsley
1/2 teaspoon of dried Thyme
A pinch or two of salt.
4 ounces of olive oil

Directions

Mix the spices and oil into a medium size bowl with a closable lid. Let that sit for a while.
Preheat the oven to 375.
Note: I get better results with small batches in a toaster oven.

Lay out the dough at room temperature and cut into strips 1/2" wide by 4" long.
If you use a rolling pin, try for 1/2" thick before cutting the strips.

Mandatory, use need white flour to dust the cookie sheet or baking tray, your hands and the strips of dough.
If you don't, expect a sticky mess that is totally unmanageable.

The Pillsbury dough works easily (probably from all the chemicals in it) and the pizza dough requires more effort. I'll stretch and pull the dough until it's ready to tie into a knot.

Bake for 10-12 minutes and pull out just as the tops start to brown. You want them soft and not crunchy.

While hot, dump them into the bowl, put the lid on and shake.
They are ready to eat!

1 package (16 ounces) frozen cheese tortellini
2 cups fresh broccoli florets
2 cups cherry tomatoes, quartered
2 celery ribs, finely chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup shredded cheddar cheese
PARMESAN DRESSING:
3/4 cup mayonnaise
3 tablespoons grated Parmesan cheese
2 tablespoons lemon juice
2 tablespoons heavy whipping cream
1 teaspoon dried thyme

1. Cook tortellini according to package directions; drain and rinse in cold water. In a 2-1/2-qt. glass bowl, layer the tortellini, broccoli, tomatoes, celery, olives and cheddar cheese.

Ropa Vieja

A traditional Cuban recipe of shredded meat in a rich sauce.

Ingredients

1. Original PAM® anti-stick spray
2. 1½ pounds of beef skirt meat, cut into large pieces
3. 1 bay leaf
4. 1½ teaspoons ground cumin
5. ½ teaspoon dried oregano
6. ½ teaspoon of salt
7. ¼ teaspoon ground black pepper
8. 1 cup chopped red onion
9. ¾ cup of chopped green pepper
10. 3 tablespoons finely chopped garlic
11. 1 can (14.5 ounces) of cubed tomatoes, drained
12. 1 can (8 ounces) of tomato sauce

Directions

1. Spray a 4-quart slow cooker with the cooking spray. Place all the ingredients in the slow cooker. Cover and cook everything at low temperature for 8 hours and then at high temperature for 4 more hours, or until the meat is tender.
2. Remove the bay leaf. Remove the meat from the pot and crumble with the help of two forks. Put the meat back in the pot and stir well to mix with the sauce.
3. Serve with white rice.

Notes

This rich dish, is common at times of parties, or in restaurants, the beef in Cuba is prohibited, but you can eat in private restaurants

Ingredients

1 pkt Jelly, any flavor but a red one will be the one!
1 cup sliced fresh fruit (raspberries, strawberries etc)
1 cup whipped topping(I used fresh whipped cream)

Directions

Make up jelly according to package directions.
Chill until slightly thickened.
Set aside 1/3 cup.
Add fruit to remaining jelly; spoon into 4 to 5 glasses.
Chill glasses at an angle until jelly is set.
Meanwhile, fold whipped topping into the reserved (1/3 cup) jelly.
Spoon topping mixture into glasses of set jello.
Chill.
Garnish and serve!

Rasberry Jam

There are few things in life as satisfying as whipping up a jar of home-made jam. This batch is easy to prepare, and is made entirely from natural ingredients

Rasberry Jam Recipe

Ingredients

900g fresh raspberries
4 cups white sugar
¼ cup lemon juice

Directions

Wash the raspberries under cool running water and remove any stems or caps.
In a large bowl, mash the raspberries until you have enough for four cups.
In a saucepan, combine the fruit, sugar and lemon juice, and stir on a low heat until the sugar dissolves. Increase to a high heat, bring the mixture to a full boil and stir frequently until the mixture reaches a temperature of around 104°C.
To check if the jam is ready, do the gelling test: take a tablespoon of the jam and place it onto a cool plate. If the mixture is firm and stays put, the jam is done. If it is not firm enough and slips off the plate, cook it for a few more minutes. Repeat the test. If the mixture hasn’t reached the desired consistency, add a little more sugar.
When the jam is ready, pour it into a sterilised, lidded jar while still very hot, allow it to cool down completely, and place the lid on the jar.
