hornswoggled: One has to wonder how much is real and how much is CGI or "comped" - or if there isn't any, how long it took to train them.
As for why this was done with sheep, it's because they're the only domesticated animal dumber and more compliant than dogs. Even horses are smarter.
When I was a kid, one of our aunties used to take us to sheepdog trials every year and they are pretty amazing - yep, Im sure some of it is enhanced but if you have ever been to an English Sheepdog trials you will see how possible it all is...
