I was wondering who all would be interested in my chili recipe. Won several competitions with it back in the day! Considering setting it down on paper and thought I would post it here if the interest was here!

Bulldog Chili


ingredients:

3 lbs tri-tip or lean ground beef.
2 large onions one white and one yellow.
1 teaspoon kosher salt, iodized will work but kosher is better.
1 stick of margarine
1 32oz college inn bold stock beef broth
2 large or 3 small cloves of fresh garlic minced
2 1lb 13oz cans of diced natural tomatoes, go quality here!
1 1lb 13oz can of tomato sauce, again quality matters!
1 1lb 13oz can of crushed tomatoes, its all about texture!
Drain all tomatoes!
2 cups Quaker oats unflavored
chili powder, get fresh cause as it ages it looses potency!
1/2 teaspoon of cumin
1/4 teaspoon of oregano
1 teaspoon fresh cracked pepper


If you opted for the tri tip your in for a treat! Dice in 1/2" cubes. from here its the same either way!

In a large stockpot brown your beef, remove to a colander to drain. Then add your margarine and onions to the stockpot and saute until translucent. Then add your garlic minced. In the mean time take a separate pot and boil the beef broth, reduce by half. Once your onions are ready add all dry ingredients including 1 tablespoon of chili powder but withholding the oats. Thicken for a moment and then add tomatoes drained. cook for 5 minutes then add your tomato sauce. cook for 5 minutes and add everything else accept for the oatmeal. Your pots going to be pretty full, simmer for about an hour. Taste and then add additional chili powder to taste. once your satisfied with the flavor add your oats, this will fade into the background and thicken your chili!

At this point you can add cayenne for additional heat. You may also wish to float a few green chillies whole for a little extra smack apparel.

chili powder quality varies on so many factors, so be careful and add only small amounts at a time. this chili is much better left over I always cook it the night before serving.

I don't know how many this will feed, myself and two friends can take out a pot in one sitting. But my friends eat 5 or 6 bowls inside of an hour!

Sorry for anything that's unclear, this is the first time I have committed this recipe to paper!

I don't know how many this will feed, myself and two friends can take out a pot in one sitting. But my friends eat 5 or 6 bowls inside of an hour!

Chili sounds good. Thanks for the reminder. I used to be desperate for the watery home made vegi chili recipe years ago. Then I forgot about it. Now, I bet it's on the internet. Your chili recipe would be good to have too. I would turn it vegi somehow. I love chili and it seems cheaper and funner to make a big huge fresh batch and freeze haldf, etc. That's what I just did with enchiladas. There's a recipe for red beans and rice on a red beans can that's really good. I think that was Bush's red beans. It's delicious fresh and really gardenny. Also, try making Eagle Brand condensed milk cookie bars. Those things are like crack. They should be illegal. If I'm getting a recipe from you, I'm also giving you ideas in return. Both of those are on the net.

Hey! Do you mean tomato sauce or tomato paste? I just made some enchilada sauce with tomato sauce and it tasted all wrong. The recipe said sauce but meant paste. I know that to be true because I went back and remade the same recipe with paste and it tasted right after that. But you might actually mean tomato sauce too, so I'm checking.

Beans aint got no place in real chili! Thats why the chili cook offs dont allowbeans..... The oats add a nice texture, thickens the chili and adds just enough starch to bring all the flavors together.
