Gruyere, Jarlsberg, Maarsdammer, Emmental, Mozarella, Halloumi, goats cheese, Blue Stilton - most cheeses really. My favourite is Chaumes (really, really stinks!), cheddar if its immensely strong. Love extremely mature cheeses, can't bear mild, weedy cheeses. Could go a really nice cheese fondue right now - yummmmmm!!!
