Try this recipe. With this you can decorate the cookies with ANYTHING you want.. you can add colouring, choc chips, or frosting. Easiest way, without cutters, is what i do : Tear out a large sheet of wax paper and put half the dough in it. Roll out the dough with your hands in a sausage shape. then cover with the wax paper and use your hands to shape the roll lenghwise. You will then have a cylinder shape, or rectangle shape. Roll it in the wax paper, put on a tray and into the fridge for a few minutes. Then you can cut and place on a cookie try to bake. This way, there's no rolling out. For the below recipe you do not really need almonds, or the frosting. Make your own frosting with icing sugar and water and a little butter. You can experiment with them :)
MELTING MOMENTS
1 c. butter, softened 3/4 c. unsifted cornstarch 1/3 c. powdered sugar 1 c. flour Sliced almonds
CREAM CHEESE FROSTING:
3 oz. soft cream cheese 1 c. powdered sugar 1 tsp. vanilla Food coloring, any colors
Beat butter until creamy. Slowly add cornstarch and powdered sugar. Beat on high until fluffy. Stir in flour until soft dough forms. Chill for 1 hours. Mix cream cheese frosting ingredients; beat until fluffy. Add a few drops of food coloring to desired color.
Roll cookie dough into 1 inch balls. Place 1 1/2 inches apart on ungreased cookie sheets. With finger, press an indentation in center of each. Bake at 350 degrees for 10-12 minutes until firm but not brown.
Cool. Top each cookie with a teaspoon of frosting and sliced almond

Kourambiethes (Greek Powdered Sugar Cookies)
1 lb. Sweet butter 1/2 c. Powdered sugar 1/2 c. Orange Juice 1 oz. Mastica or amaretto (opt.) 6-7 c. Cake flour (Swans Down)
Melt butter and cool. Beat until creamy, about 15 minutes. Add powdered sugar and beat. Add orange juice and beat. Add liquor. Fold in flour and beat. Roll into crescent shapes. Bake at 350 degrees for 20 minutes on ungreased cookie sheet. Roll in powdered sugar while still warm.
