Here is one for today: 1 head of green cabbage, cored and sliced. Bring water to good boil in the pot and throw the cabbage in. Par boil 3 minutes. Drain. In a 13x9 greased baking dish put a layer of cabbage Top with a layer of chopped tomatoes, sprinkle some dried dill and black pepper. If you use salt, sprinkle that too. Add a layer of shredded cheddar cheese. Repeat this process ending with the tomatoes on top w seasonings. If you eat bread (wheat) top with bread crumbs. If you are wheat intolerant as I am use some finely crushed brown rice crackers. Top with butter. Bake 350 oven for 30 min.
For dinner this day I will make a cauliflower crusted pizza
I large head raw cauliflower sliced and chopped add 2 eggs 1 cup shredded cheese, your choice chopped garlic...I love garlic Italian seasoning Mix and pour into 13x9 greased pan Cook 20 min 350 oven When that comes out add sliced mushrooms, onions, peppers, fresh sliced tomatoes-you could add thinly sliced yellow or green squash. Top with Cheese of choice Sprinkle with more Italian seasoning.... Bake maybe 20 min...till cheese is golden....depends on your oven.
