katt1017: Who else likes cast iron for cooking?

I have four frying pans I use, two covered pots, a dutch oven, a corn pone pan, muffin pans, round and rectangular skillets and an assortment of extra frying pans and various pots in reserve for use or gifts for the deserving.

I just think food tastes better cooked in well seasoned iron.

What about you?
Ack! Just the opposite. My dad bought some cast iron pans and I always hated them. I had to wash them. They were hard to lift and always greasy as Hell. What some call seasoning, I call filth. So, I waited until my dad wasn'tr looking and soaked and scrubbed them in hot water. Some chefs say to use 'seasoned' pans to this day. No freakin way Jose. Do you know what a health inspector would say about a seasoned pan? Guess. grin

ooby_dooby: Is cast iron cookware very expensive in the UK? I'm somewhat surprised because Great Briton lead the world in iron at the dawn of the industrial revolution.

As far as I can remember, Ooby, it was yes.

I always loved it, but could never really afford it.

I love cast iron because of the iron it adds to food. I don't eat meat... and I used to often test borderline anemic. Cast iron cooking is such an easy solution!

DodgeBabe: I have never had the pleasure of cooking in cast iron before I moved here; could never afford them.

But they are great, yes!

I am collecting more at yard sales when I can, and am learning about how they need to be seasoned.

My father taught me to coat them with lard and leave them on top of the wood stove. As the lard sinks in add more. In a few days it is perfectly seasoned.

There was one of those racks over the sink where we used to live. It was too high for Rose and too low for me.

8 lbs of cast iron + skull = OUCH!

Yep. Give a cast iron pan to some newlyweds and it becomes a murder weapon sooner or later. Every time. I used to acidentally smash my finger tips trying to wash my dad's huge cast iron pans when I was a teen. Has anyone ever heard of a potjie? I think it's pronounced poiky. I was looking for one for my brother. They were $100.00 and up, and then I told him and he said he didn't want one anyway. He claims that South Africans have never seen things like hamburgers, hot dogs, pulled pork, Five Alarm Chili, and Sloppy Joes. But they are barbecue maniacs with these little black iron kettles and they make stew that takes all day.

It looks like a long legged version of a dutch oven.

I wonder if the stew recipes are any good. They have recipes on the nat and on Recipezaar. Stew is usually good. They also bake bread outdoors somehow.

n South Africa, potjiekos (pronounced /'p??ki?k?s/), literally translated "small pot food", is a stew prepared outdoors in a traditional round, cast iron, three-legged pot (the potjie) which is found in the homes and villages of people throughout southern Africa. The pot is heated efficiently using small amounts of wood, charcoal or if fuel is scarce, twisted grass or even dried animal dung.

I'm thinking of trying to make a pizza on top of the wood stove in a cast iron skillet with the lid of one of my pots or maybe an inverted wok on top to hold the heat.

Has anyone tried do do anything like that before? If so I'd appreciate any tips you can give me.

Sounds like it would work to me. As long as there was the pan was coated so the pizza wouldn't stick.

thumbs up

Hi Katt

Line your skillet with a tea towel..then a dusting of flour...cook the pizza as you normally would..I do it for breads all the time.

Its not unlike a BBQ when using Charcoal..you need to wait for the embers in your stove to be glowing insted of flaming in order for you bread to rise and not burn....
