I was watching Masterchef-The Professionals on BBC last week and this lady stangely put vanilla into her mashed potato. Now if Michel Roux Jr said it was magnificent it must be! Before the lady cooked it Michel thought she was bonkers. But it worked really well with her dish and he loved it! So i tried it twice since and its delicious but it has to be with a rich meat. No good with chicken or lamb! Must be with rich steak or with duck! thumbs up

Try this recipe! Its fabulous.

Ingredients
1kg Potatoes, peeled and chopped
salt and fresh ground black pepper
150ml Milk
1 vanilla pod, slit open lengthways
1 tbsp vegetable oil
8 strips of rashers of smoked streaky bacon, diced
1 large onion, sliced

Method
1. Cook the potatoes in a large pan of salted boiling water until
tender. Drain, mash and season with salt and freshly ground pepper.

2. Meanwhile, place the milk in a small saucepan. Scrape out the
vanilla pod seeds and add them and the pod to the milk. Bring to a
gentle simmer, then set aside to infuse.

3. Heat the vegetable oil in a frying pan. Add in the bacon and onion
and fry, stirring occasionally, until browned.

4. Strain the infused milk into the mashed potato and mash together
well. Stir in the bacon and onion. Season to taste with salt and
freshly ground pepper. Serve.

Yeah i find the seeds are the best but you can always use the vanilla essence , about a tablespoon if you so wish!

Tin of baked beans- 28c
1kg rice under 2 euro
Tins of tuna are very cheap too,
I`m on a tight budget so I eat cheap but nutritious foods, Beans and rice is a staple diet of Latin Americans
