I've recently discovered the tongue of cow! I don't have any recipe for it, but it was a great surprise! I know it takes like 3 hours to cook! Delicious! The girl was from Colombia. Dare to ask a latina friend of yours to cook it for you. It might be common around the region?

You dip the cooked kidney mixture in raw egg? That is a surefire recipe for salmonella! Do you cook the egg at all?
