I'm Scotch/Irish, wierd that St. Pat was a martyr during the reformation who became a saint posthumously. In my family, this is a day to celebrate the ironies of life.

That's an "underground" code for Roman Catholics (inquisitors at least). Rome's symbol (since the before the days of St. John) has been a red dragon, remember the dragon symbol of King Arthur? In real life, he was Artur (or Ardur, depending on your source), a Roman vassal who was double crossed.
