englishblueeyes: My dad still does that - dips a piece of bread in the bacon fat as it is cooking and I am ashamed to say that it is very nice, but I stopped doing it once I watch Gordon Ramsey and a piece he did on the oinkers!!! Not pleasant!!

There is a show called Bizarre Foods with a little chubby chef who eats the most unbelievable foods and his motto if it looks good try it but I must admit when he eats raw fish hearts it turns my stomach a tad!!!

Here in Cyprus people eat sheep heads and seeing them in the butchers looking at me does not want to make me eat them, although I have no problem with their chops!!!

Ingredients

1 sheep's stomach or ox secum, cleaned and thoroughly, scalded, turned inside out and soaked overnight in cold salted water
heart and lungs of one lamb
450g/1lb beef or lamb trimmings, fat and lean
2 onions, finely chopped
225g/8oz oatmeal
1 tbsp salt
1 tsp ground black pepper
1 tsp ground dried coriander
1 tsp mace
1 tsp nutmeg
water, enough to cook the haggis
stock from lungs and trimmings


And I dont even want to know what an ox secum is.


I know what an ox secum is barf

Hey come on, you guys have some strange sausages, and thats all a haggis is in reality, a large overstuffed sausage.

Unless of course you get to go on a haggis shoot and bag a live one, but thats another story....................

minniemoo: had haggis a few times when i lived in London...mmmmmm (scottish friends) thought it was lovely, reminded me of our black and white puddings here, which is also made from left over parts so to speak
Nothing goes to waste, an why not, it's not inma kill ya lol. For most it's getting past the thought lol.

oh you should....and then try cooking sausages from the fat around sheeps kidneys or dripping as some might call it...you'll never taste a nicer sausage applause applause

I was visiting Inverness and stayed in a little village called and had it the hotel there ( sorry can't remember the name ) it was served in small sized balls with a whiskey and cream sauce and was totally delish!!!

The only problem is that I am loathe to try it again as it was so good I don't want to be disappointed!! lol
An what you've had still may not be the best, i'm thinkin, back to the homeland for the best! :)

closet i have come is cooking lamb kidneys, hearts and livers etc. for my dogs. While i have to admit they appeared to love it, i really am a chicken

Ah yes, once a year i treat me to a bottle of McCalluns it's a 15 Year old about a 100 bucks canadian. Neat only!

lol that is so true..we have tripe and trocheen here barf which is basically the lining of a cows belly barf and i'm not to sure what the other is..looks like a very long kidney...oh god now i need to talk to god on the big white telephone

When i walked The West Island Way i had the pleasure of having haggis neeps and tatties, very nice indeed. Much better than Pigs ears that they seem to like here.wine

For instance .

That wee yin (that wee one ,normally a kid) thats the correct spelling of our odl grammer but now its known as slang in other countries .Some people think they know whats best for us ,that includes our speech .But we wont change it .Its actually became alive again because we feel us Scots are fading away from our true heritage laugh

Dilly, good on ya to keep it, heritage these days is becoming more lost than gained. :-) My neighbor says the same, he goes there yearly an visits family. Some day i'll go there. I'd love to see it.
