Conchitaconsuela: Boxty

1 1/2 cups grated raw potatoes
1 cup all-purpose flour
1 cup leftover mashed potatoes
1 egg
1 tablespoon skim milk
salt and pepper to taste
1/4 cup olive oil

Directions
1.Toss the grated potatoes with flour in a large bowl. Stir in mashed potatoes until combined. In a separate bowl, whisk together the egg and skim milk; mix into the potatoes. Season to taste with salt and pepper.
2.Heat the olive oil in a large skillet over medium-high heat. Drop in the potato mixture, forming patties about 2 inches in diameter. Fry on both sides until golden brown, 3 to 4 minutes per side. Drain on a paper towel-lined plate. Serve warm

Amount Per Serving Calories: 226 | Total Fat: 10.3g | Cholesterol: 36mg

70Libra: It's the potato... it was easier to come by in hungrier/leaner years than flour... probably during famine times.


I doubt they had much access to potatoes during the famine seeing as it was the loss of the potato crop that caused the famine..dunno

Nope.

The potato was the only product that the tenants farming on the land were allowed to keep for themselves. When it failed they went hungry, but only because the 'gentry' still took all the other produce.

Exactly...so the origin of the boxty could hardly have been during the famine when the crop failed...or am I missing something...blues

The crop failed... but that doesn't mean there were no potatoes... they were just small and mostly rotten... but they did exist.... and were eaten however they grew

Ah please do N. I have no doubt you are right. In those times the basic nature of fertiliser and lack of science involved probably led to much smaller spuds...dunno
