I have taken a soft pretzel recipe to make pizza crust for a home made pizza pizza

Soft Pretzel Recipe

Almost World Famous!
For 3 dozen 6-inch sticks or

For 1 dozen 6-inch Pretzels
1 tbsp Yeast
1 tbsp Sugar
1 tsp Salt
2 tbsp softened butter or softened margarine
1 cup warm (115-+ deg F) water

2 3/4 cups flour
Coarse Salt to sprinkle on Pretzels before baking
5 tsp baking soda mixed in 4 cups water in a non-aluminum saucepan.
1 large slotted spoon to "go fishing"
Greased cookie sheet
Preheat oven to 475 F

Put yeast, sugar, salt, butter/marg, water and ONE CUP of the flour into a medium mixing bowl and pour in the water.

Stir till all smooth, and yeast starts to bubble.
At this point add the rest of the flour, stir till it is mixed in.
When mixture is too stiff to stir with a spoon, begin kneading.
Knead dough till smooth and till it no longer sticks to the bowl and your hands

Allow dough to rise to about double its height.

While dough is rising, grease the cookie sheet. and prepare the baking soda-water mixture and bring to a boil on stove.

When dough is risen enough, punch down, knead for a minute or so, then divide and roll the 6-inch sticks with your hands, to about 1/2 inch in diameter, or 12-15-inch long rolls to make into the pretzel shape.

Allow sticks or pretzels to sit for about 1-2 mins. Place them into boiling water-baking soda mixture one or two at a time.

Let the pretzels boil for 1 minute 10 seconds, then flip them over with the slotted spoon and boil on the other side for 1 minute and 10 seconds.

This boiling step gives them a firm skin and adds some flavour. Not boiling long enough leaves them too soft and allows them to rise too much. Boiling too long makes them tough.
Fish them out of the water, let them drip off and place them on the greased cookie sheet.

When all the pretzels or sticks are done, sprinkle the coarse salt on them.

Bake for 12-15 minutes or till sticks or pretzels are golden brown.

You can double the recipe in proportion.

Have you ever set down with a stack of pancakes, and forgot that you had run out of bacon, ham or sausage?

This is what I make, to have on hand!
Beef flavored syrup (or any meat flavor you have the flavor for).

2 cups water
1 cup sugar
1/2 - 1 tsp. beef bouillon flavoring or flavor to taste.

Bring sugar and water to a boil, stirring occasionally.

Once the sugar has dissolved, remove from heat and add the beef flavor.

Works great on pancakes....

The Old Settlement Cook Book is your grandma's generation's equivalent of Betty Crocker. This book has a recipe for just about everything. All the other baking recipes I have ever tried from that book seemed mediocre to crap. I have not tried all their baking recipes. Also, I used their same ingredients but rewrote their directions my own way. This recipe is good and a family favorite. What you do is freeze bananas that are about to spoil until you're ready to bake then thaw them in the microwave. Messy but effective. Note that this recipe uses normal household ingredients and not a small fortune in imported gourmet ingredients. Also, no yeast, no kneading, no waiting around all day for it to rise.

2 cups sifted flour. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/4 cup butter (half a stick.) 1/2 cup sugar. 2 eggs. 2 medium bananas. 1/2 cup buttermilk. I use normal milk and it works fine.

Preheat oven to 350. Melt butter slowly on half power in microwave or use a double boiler. In a small bowl, mash up the bananas in milk with a fork. Make them sludge. Add melted butter. Sift all dry ingredients into a large mixing bowl. I like to sift three times and use fresh flour when possible. Add eggs to wet ingredients and blend well. Add wet ingredients to dry and blend well. If it's too dry add a teeny bit of water, scrape edges of bowl with a spatula and blend some more. I just made this recipe minutes ago and it nicely filled two foil pans sprayed with Pam that were about three by eight. That's the size that's smallish but not teeny. Bake for one hour at about 350. DO NOT FILL THE PAN ALL THE WAY UP. FILL ABOUT THREE QUARTERS. THIS RISES IN THE OVEN. Use the toothpick test to determine when done. Stick a wooden tooth pick in the bread's center after an hour. If it comes out with cake or dough, you need to keep baking until the toothpick comes out bare.
This recipe freezes well. I put foil on top of the foil pans and tape on a date. The longest I have frozen it is a month and a half. Then, it gets eaten or given away on the holidays. It won't last two days if you have kids. Out of all the stuff I bake, people go on and on and on about how much they like my banana bread. Serve on a silver dish with a doily. Maybe sprinkle a tiny bit of powdered sugar on top. Maybe surround it with cookies. Cut loose a couple of slices to show the guests it's OK to go ahead and whittle off a chunk.
Side notes: It works fine if you double the ingredients. I've done that before. I am not sure, but I also think this recipe can fill one normal sized pan and also one teeny little pan. I like to use those foil pans. That way I can freeze it without having to rip it out of the pan risking breakage. Also, that way nobody can say I made the bread pans vanish. It's easier to transport as gifts that way too. If you say nice things about this recipe, I might give you the cranberry pumpkin bread recipe!!!!!!!!!!

Larry I met your brother!

You know I'm not the first peep to tell you. laugh

Now a good recipe for some Italian soul food.
2 (14.5 ounce) cans crushed tomatoes
1 (6 ounce) can tomato paste
2 clove garlic, minced
1/2 cup diced onion or 1 small onion
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried oregano
1 1/2 teaspoons sweet basil
1 teaspoon sugar
1 bay leaf
1/2 cup or so red wine
olive oil enough to coat the bottom of your pan

1 lb pasta noodles (just follow the directions on the box or bag}

In a large skillet over medium heat saute the finely chopped onion in olive oil for 2 minutes, then add the garlic. Don't allow the onions or garlic to burn, you may need to add slightly more oil. Saute until the onions are translucent. Add the red wine and reduce. Add the remaining ingredients and stir together. Stirring occasionally and allow to simmer for approximately 30 minutes.

Bouno appit you all! That's southern Italian...Sicilian.
