It is an accretion of damage from cosmic radiation and other things killing off the cells of your body. Radiation damage from the stars is the primary cause of both gray hair and other cellular damage recognized as a symptom of aging. Although most stars (including our sun) emit low levels of the rays, most of the higher energy ones (over 1 billion electron volts) causing the damage to living cells seem to be emitting from one spot just below the Virgo cluster. Our atmosphere's ozone layer shields and attenuates most of the constant bombardment, but enough leaks through to cause your hair to become damaged and turn grey. Hair turning gray is the first visible to others sign you are no longer young. Fear not. Other cells are also dying. Your body is designed to replicate almost any cell via mitosis up to 28 times. After that, if it dies, it will not be replaced. More local environmental poisons such as PCBs, local radiation sources, etc. can also cause cell damage and aging effects, but it is most generally Cosmic Radiation causing the damage.
