i worked in a cafe years ago and we made 7 flavours of bread fresh every morning, also muffins etc, even gluten free and vegan ones..
thers so many things you can put in it!
ie indian spices
olives
corn and red capsicum
italian herbs
sultanas and cinnamon
feta and sundried omatoes
etc
limited by imagination really! grin
these days can only eat dinkel and spelt flour as modern wheat causes digestion problems..

Oky fellow, Uptiger .... "your" bread has just gone into the oven..... and it better come out realy realy nice, cause today I didnt walk to the village to buy fresh bread... thought to myself..."I gonna try Uptigers bread"..... Anyway however it comes out.... that is what my son will be eating at Varsity tonight ..!!!

If it comes out good, I will be realy thrilled, cause what always puts me off is having the sticky hands, flour up to my elbows, and the gummy table to clean! Also... then tomorrow I going to try making it into Raisen bread, for the kids. Thanks... in anticipation....dancing

Next day ..... Well maybe cause I baked it in the electric oven ... can`t use the wood oven in summer or the house will overheat!... but it dripped a bit over the end of the pan, it rose nice and round on top, but had an air-pocket in it so the top broke off when sliced, needed more salt than the 3 pinches.

So today I going to make it again, just not quite so sloppy, with half a tsp of salt, then have to increase the sugar, maybe to 2tsp (yeast needs sugar to grow) ... and because the dough is nice to handle maybe knead it a little bit in the bowl.

Anyway... the bread was realy nice .. I just had to sprinkle some sea-salt on the buttered side of the sandwiches before closing them with cold meat .. and this morning I see the entire loaf has been eaten ... by Lone Wolf when he returned last night!thumbs up dancing

nice one! i'm impressed you can adapt and improve the reciepe! it is a easyuse bread, it sounds like it worked to well, if it had a air bubble laugh no more tedious kneading perhaps...? conversing cheers

yep,it's a "Kachelofen" Kachel for those nice Tiles.
Used to live in an old Farmhouse near Zurich as a Boy,where we had such a Contraption.Come to think of,my Ma did bake Bread in that a few times.
Never got such Bread again,a pity actually.
Yeah those Old Ovens.The Landes Museum up here in Zurich has a beautiful Collection of them.That really must be a Jewel of Kachelofen- Building in your House

Ah thanks .... at last I learn how to spell it!

And tonight it is being lit for the first time this season .... lovely. Takes almost a whole day for the heat to penetrate and build up, the fire is out but the heat lives on.

Tomorrow we do the roast meat in it, and the bread baking begins. Yes I love it.

I love love love fired Maltese bread. Since growing up have always loved crusty topped loaf and lived close to bakers so the smell in the air reminds me of growing up.

Particularly like Bigilla on my crusty bread or fish slices. applause
