My family cans fruits and vegetables ans my question is how long is canned food in jars supposed to last since there is no expiration date on home canned food if the seal is still on it?

I can mostly fruit and jam/jellies

Do you use parafin oh just the jars? There is actually a lot of different foods you keep in jars. My step father used to can pickled eggs. There is a lot of vegetables that you can pickle, too.

I canned foods for a lot of years. Although there is no expiry date, they usually recommend within a year...I found that usually the products were okay for a couple years (especially fruits and jams), but I was always cautious...if it doesn't look or smell right don't take chances...If storage areas are less than optimum, don't go over a year.

It is one of the berry families. Logan berry, strawberry, raspberry, current and I don't think bananna berry is a real berry, lol.

roy if it has bubbles in the jar before ya open it its bad throw it away.and if you keep it in a cool place like a celler,thay should last a long time if you have a good seal..and if it taste bad dont eat it ,it will make ya sick lol

I think elderberry is from a bush. Elderberry wine is good, too. My dad taught me to make home made wine. Home made wine is only about 5 per cent.

Oh Roy, you KNOW I know how to can!!! LOL

I try to use my canned goods up before the next canning season.

But if they are going to competition at the fairs, they may be OK for me when they come back, but 2 years is my limit.

The bad signs are leakage, bad smell, discoloration or any sign the the seal has failed.

I don't use paraffin on my jellies; just the modern Bell lids and I store all my jars in a cool place in the dark.

We save all our jars here, Joanie and the jars can be reused. Actually you can save a lot of money canning and you can make almost whole meals in a jar that you can store when the garden is not producing. Winter onions, I believe, are now growing. I just learned that when the sap is down you can transplant trees. February is the month to break up new ground for a garden. You can kill the cut worms and soon it will be planting time. I know the different parts of the country has different growing cycles.

I was told on the radio today that this is the month to spray fruit trees for bugs. Is there anyway to permanently get rid of bag worms, Joanie?

You can thank the pilgrims of the 1619-1626 for that. They are silk worms. In Japan they make silk stockings from them but here they are just a nusiannce. They first thought they would be a good way of making money but it kind of got away from them. It is like the kudzu idea that came from Japan. It completely covers telephone poles and forest in Alabama and Georgia. Some ideas need to be reconsidered, lol.
