I haven't tried mayo on my fries, but someday I might.
What I have tried is poutine.
Poutine is fries with cheese and gravy on top. There are many variations of poutine.
My canadian friend Tumpa who used to be on the forums was my expert on poutine.
Their are restaurants here in central Maine who serve poutine, because we have a large number of people who have moved here (and then back again) from Canada.
The restaurants also have vinegar and ketsup on the tables.

Poutine is only known in Eastern Canada as far as I know. Having lived in Ottawa several years, never ones tried it.
