I discovered this unusual, delightful soup many, many Junes ago. The delicate flavor and beautiul green color are the very essence of early summer. The nourishing ingredients are bursting with goodness straight from the Earth Mother. The fresher the peas you can find, the more vibrant your soup will be:
2 cups of hot water 1 cup cashews or 1/3 cup cashew butter 1/4 cup onion, chopped 1 tablespoon olive oil 1 teaspoon sea salt 1 garlic glove 1 pound fresh (or frozen) tender green peas sprigs of fresh mint, for garnish
In a blender or food processor, blend the water, cashews, chopped onion, olive oil, sea salt and garlic until smooth.
Add the green peas and continue to blend until smooth
Transfer to saucepan. Thin to desired consistency with added hot water, and simmer over medium heat, stirring often, until soup is heated through. Serve immediately or chill for a minimum of 2 hours and serve cold.
This soup is especially pleasing when served with a sprig of fresh mint in each bowl.
