Kumara(Sweet Potato) Salad

I have been making this salad every Christmas for years. The family never seem to tire of it.
It is deliciously simple, and simply delicious. The beauty of it, is it takes little time to prepare.
Traditionally a summer recipe.

Ingredients

2 Large Red Kumara(Sweet Potato)
3 Spring Onions
1/4 Cup Mayonnaise
1/4 Cup Sour Cream
1/2 Teaspoon Curry Powder
Salt to taste
1 Tablespoon Chopped Walnuts

Directions

Cook sweet potato in boiling, salted water until just tender.
Drain and leave to cool.
Cut into 2.5cm cubes.
Combine sweet potato and spring onions in a serving bowl.
In another bowl, combine mayonnaise, sour cream, curry powder and salt to taste.
Pour this over the sweet potato.
Toss to coat.
Garnish with walnuts.

Notes

I double this recipe at Christmas to serve 6-7 people.

Ingredients

INGREDIENTS
1 pound tomatoes, diced
¾ pound cucumbers (1 European or 4 Persian), diced
1 green pepper, preferably a long green Italian frying pepper, seeded and diced
½ small red onion, sliced, soaked in cold water for 5 minutes, drained and rinsed
¼ cup (loosely packed) coarsely chopped flat-leaf parsley
1 tablespoon chopped dill
2 tablespoons chopped mint
1 teaspoon sumac
½ to 1 teaspoon Turkish or Aleppo pepper
Salt to taste
3 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
1 to 2 ounces feta, crumbled (1/4 to 1/2 cup) (optional)
Black olives as desired (optional)
Romaine lettuce leaves and pita bread for serving (optional)

Dairy Free, Gluten Free, Healthy, Low Cholesterol, Low Sodium, Middle Eastern, Cucumber, Fresh Herb, Onion

Directions

PREPARATION
Combine all of the ingredients except the olives and romaine in a large bowl and refrigerate for 30 minutes. After 30 minutes toss together, taste and adjust seasonings. Garnish with olives and serve, with pita bread and romaine lettuce if desired.

"Outlaw Slaw"

While growing up my family got together all the time Many BBq's and my Elder sister came up with a recipe similar to this but being a Chef I went on to perfect it The reason I love it is non dairy which means if you left it covered over night just throw it in the fridge and cool it and if your getting low just shred up more onion , carrots and cabbage and throw it in the brine over night stirring it once in awhile

Ingredients

1-Head cabbage (I make it one batch at a time for mass quainties)
2-Med carrots
1/2 Sm onion

!-Cup white vinegar
1-Cup white sugar
3/4Cup oil
1 Tbls ground mustard
Salt and pepper to taste

Finely chop veggies and place in a Lg mixing bowl set aside

In a sm sauce pan mix the rest of ingredients in pan Bring to a boil stirring often on Med high until it starts to foam up When it get to the point of boiling over remove and pour over veggie mix quickly and mix up I leave mine there and stir it if I walk by it

In the 30+ years I've been serving it I can't recall very many who didn't like it and I had 2 restaurants and 1 bar in Detroit Lakes MN Tee Pee's Sportsman's bar The birthplace of the "WE FEST" in 1983
I was locking up one night and just when I turned to go downstairs for a well deserved rest a car pulled in A crew got out and came up to the door and asked I was closed Of course I said no and let them in I locked the door up again and asked what kinda beer they drank and it was the Bull so I grabbed a case of tall boys and sat down at a table and made the We Fest possible

Next day i tried scrambled to get a semi truck of folding lawn chairs delivered before the fest but couldn't come hell or high water After the dust settled Jeff and I figured of I lost out on around 7-10K

Tzatziki Sauce (Greek Cucumber Salad)

A cool and creamy cucumber and garlic yogurt sauce that is perfect in pitas, on salads, for dipping or even eating by the spoonful.
Tzatziki is a Greek meze or appetizer that is made from strained yogurt, cucumber and garlic. Optional ingredients include herbs such as dill, mint and/or parsley and lemon juice is also common. If you are feeling daring you can even hit it up with a splash of ouzo. In addition to being served as an appetizer it makes a great dip or condiment especially when served in gyros or with souvlaki.

Ingredients

1/2 cup plain Greek yogurt
1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain
1 clove garlic, grated
1 tablespoon fresh dill, chopped
2 tablespoons lemon juice (~1/2 lemon)
salt and pepper to taste

Sliced beef steak
Sliced cucumber
Cherry tomatoes , cut into half
Sliced spring onion
Sliced fresh chillies
Cilantro
Thai Basil
Fesh mint leaves

Dressing :
Soy sauce
Fish sauce
Oil
Sugar
Lime juice
Crushed garlic cloves
Crushed peanuts

Directions

- Mix the dressing
- Marinate the beef in the half of the dressing for 30 minutes
- Sear the beef for 2 minutes
- Mix all of the ingredients together
- Sprinkle the crushed peanuts for garnish

BEST EVER BACHELOR COLESLAW

Most coleslaw recipes are loaded with sugar.. this has none and it is delicious! Pure simplicity!

Ingredients

1 head Cabbage
2 Carrots
Equal parts mayo & your favorite BBQ sauce

Directions

Shred/grate and enjoy

If you mix up too much BBQ & Mayo together, save it in a jar to use as a hamburger topping.

1/2 to 1 cup Mandarin oranges

Indonesian Rambutan Pickles

Rambutan Pickles famous lately in Indonesia. I dont know where it start actually, but it seems from some city in kalimantan island ( Banjarmasin) or some island in sumatera province like Bangka Belitung. Because the small calamansi lime is grow dan can be found there.

I found my own small calamansi lime because i have planted in my garden.

Indonesian Rambutan Pickles Recipe

Ingredients

A bunch of Rambutan fruit remove the skin
8 Red Chilli pepper cut in small pieces
3 or 4 sonkit lime / calamondin/ green small calamansi lime
1 cucumber
a pack of honey pineapple
1 bangkoang/yam bean
mineral water
1 teaspon salt
6-10 spoon sugar

Directions

1) Peel the rambutan skin untill you got the white flesh of rambutan fruit, place in a bowl
2) Cut cucumber and bangkoang/yam bean in to a tiny square and placed in the same bowl
3) Cut pineapple in to a tiny triangle placed in the same bowl
4) Shake sugar, water and salt pour to the bowl
5) Squeze the lime over the fruit in bowl and give the red chilli, stir it.
5) EAT!

Notes

1) If you want to get a sweet taste than you can add more sugar but if you like salty you can add more salt.
2) If you want to serve it cold, you can keep in for a while in refrigerator.

very little virgin olive oil (because the leaves of purslane are oiled) you can even skip this if you wish...
apple vinegar

add the cheese, the oil and the vinegar
