It is an interesting and fair book.
Also what I find fascinating is to imagine the surroundings at that time (nature, people, culture, food... ).
A good movie would add those elements.

No offense intended but some reading (from reliable sources) is necessary to understand the history of your country (Texas is part of your country now) and the history of my country.

In fact if Texas want to exit USA we could give them "los Chilangos" as a country-warmer.

depends how you cook and prepare it. top round, bottom round and eye of round come from the back of the cow near the hip where the muscles are used frequently. the meat is very lean but tough.


my father owned a catering business as well as the butcher shop. when he would prepare it for parties he would put it in the smoke house because this allowed roasting it at a very low temperature all day. plus we were roasting 5 or 6 at a time. the very thick fat covering on top of the roast would provide the moisture. he would remove the roasts in the medium rare range and put in a huge covered kettle for finish cooking and transport. once at a wedding destination the rather thick fat covering the roast was removed and i would slice the beef on the thinner side. we never used eye of round and the top round was always more tender than the bottom round. but, both the top and bottom round were tender.

you don't have a smoke house for slow cooking but a few ways for you to cook bottom round as a roast is to put it in a slow cooker or pressure cooker as a pot roast. add a small amount of liquid, could be water or something flavored. if using pressure cooker follow cooking times that comes with your equipment. if you're using a slow cooker, cook for about 8 hours.

if you just want to cut a 1 inch or inch and a half thick piece off the bottom round roast and cook it outside on the grill, the first thing you will need to do is pound it out with one of those hand held hammers that tenderize the meat. you have to break up the muscle fibers in it. you can now season it and grill it if you like, but i like to marinade it over night to further break the meat down then grill.

i hope she would first bludgeon the beefsteak ...
