i don't think that one persons beliefs should be forced on another.
Why can't Christians and Muslims marry and live together in harmony?
I for one certainly wouldn't stand in the way of someone elses religious practices.
We have the same God....just different rules and regulations.

She could convert just to please him but that doesn't mean that she would believe in it....just converting to save the relationship. Taking on a religion, doesn't necessarily mean you believe.

in most western countries you can get a registry office wedding, means you are legally married. you have to arrange the church part yourself and it's optional.
