Hey can I take you up on that offer (although it was not intended for me?).. I would love an authentic recipe for Ceviche.. I had this when I visited Cozumel in 2007 .. and I loved it!! But I would rather have a real Mexican tell me how to make it!

This is a good recipe, the only thing that I would change is to marinate the fish with the lemon+Lime juice for 1 hour or so.

Lasagna roll ups sound good.
My grandma makes these cool roll ups. She gets pickled Okra from somewhere. Then, she flattens white bread with a rolling pin. Then she rolls up the bread with Okra and cream cheese. They're awesome. I ate half the plate last time she brought them.
* 1 cup (250ml) tomato passatta * 600g ricotta (low-fat, if desired) * 250g frozen chopped spinach, thawed * 2 tablespoons chopped flat-leaf parsley * 2 tablespoons chopped basil * 1/4 cup (20g) grated parmesan * salt and cracked black pepper * 6 fresh lasagne sheets * 3/4 cup tomato passatta, extra * 1 cup grated low fat mozzarella * 1/3 cup (25g) grated parmesan, extra * green salad, to serve

Preheat oven to 190°C. Lightly grease a 20cm x 28cm x 4cm-high ovenproof dish. Pour in tomato passatta, spreading evenly over base. 2.
Place ricotta, spinach, parsley, basil, parmesan, salt and pepper in a large bowl, and mix to combine. 3.
Cut each lasagne sheet into 14cm x 16cm pieces. Place 1/3 cup of ricotta mixture along length of each lasagne sheet and roll up to form a tube. The mixture should make 8 tubes. Lay tubes side by side in the dish. Spoon over extra tomato passatta to coat. Sprinkle with cheeses and bake for 25 minutes or until golden. Serve with salad.

Fresh lasagne sheets, available from the supermarket chiller, are actually easier to work with than dry pasta. If unavailable or if dry cannelloni rolls are preferred, just cook according to packet directions. Follow steps 1 and 2 above. In step 3 spoon the filling into each tube, place in baking dish and coat with passata. Expect to cook dry cannelloni for about 10 minutes extra.
That sounds good too. I wonder if it would work out in roll up form. Hee hee. Making lots and lots of roll ups would be one way to get a kid to eat.
Has anyone ever made eggs in a basket? My uncle swears that gets kids to eat eggs. You make a piece of toast, poke out a nice round hole in it with a biscuit cutter or a cookie cutter or a cup or whatever. Then you get a frying pan really hot ane butter it. Put the toast in and crack the egg so it flash fries on the bottom. Turn the heat a bit lower and cook the egg until solid. I like to flip it. The object is to get the bottom of the egg to weld itself to the hole so that there isn't a ton of gross egg white on the bottom. A person who is good with eggs might even be able to remove some of the whites. It's supposed to look like an ete. My great Grandma called it an Egyptian eye. They're way less grotty than a plain fried egg and if you serve it with toast they can eat the yoke with toast.
Other good egg dishes: A stack of biscuit, egg, asparagus and cheese served with a white sauce.
Throw the eggs on top of a slice of white toast, a slice of rye toast and cheddar and sausage cubed. Two pieces of buttered toast is more than enough. It's no good if you skip the cheese or sausage and no good with grated cheese.
