sounds like she was already seeing somebody else when she met you..you're just be used whenever her urges get the better of her
i dont think she is like that, she comes across as honest.
Maybe she busy, working ect, men are the same. most i know. not keen on texting , try phoning 
Something sounds off to me, while she may not like texting if have been seeing her awhile it would be common curtesy to reply to your texts. I think the long absence thing is also a bit off. I feel that you are not happy with this am I correct.
i find it very ignorant that she's not answering the text, which is strange because she does not come across as ignorant person, i would describe her a a kind caring person.

Hello Buzzy --my take is this ,,,if you really like a person , communication comes very easily and naturally --infact ,if you care for that person , you can't wait to speak to them ,, can't wait to catch up on how each other is doing , and how each other's day has gone by .
You describe her as a nice caring person ,could you perhaps the next time you are speaking with her, discuss why she won't reply to your texts , or call more often ?
All of us lead busy lives now , especially in the current climate --so with respect , saying she is busy , is really no excuse .
You need to know where you stand --

If it was me, I'd be losing interest on account of you doing just that, and not showing her that you are interested.

The not replying to text if its during working hrs sound enough as she, might not be allowed phones at work depends on job,
But if she cant send quick text on break, or even lunch or while not working does not add up.. even if its only few lines... but weeks
