Mexican cornbread is in the oven, and the butter is sitting on the side, ready to be "slapped & swabbed" on top of said muffin, when done. umm, ummm

Made a little adjustment to said recipe. Instead of using regular "whole kernel corn", I substituted for "whole kernel corn WITH small chopped/diced red & green bell peppers", PLUS I threw in a few small "pinches" of bacon bits in the mix.... tada!

Hello,Sounds yummy to my tummy.I have never made Mexican cornbread.That would taste good along with some chili etc.
I've always made the regular cornbread instead.I'll have to make some sometime.I like to try different variations of different recipes.

It's really easy... just fix you cornbread as usual, BUT.... also include shredded cheddar cheese, whole kernel corn, jalapeno (chopped/sliced) pepper. Just add the amount of extra ingredients to your likings....

I think next time I will chop up a small white onion, and add it. I like the white, because of the heat taste...

OK, would like to know how it worked for you...

Then the Jalapeno peppers might not be a good idea either... unless you use a bare minimum of them (maybe a pinch).. But, just use what you would think is good for you...

Well, I didn't name it, so I have no idea of it's origin... but now that you brought it up... I just might Google it now.

"Steroids" is a descriptive word I used for the addition of the other ingredients, that are somewhat of an enhanced heat factor (with the exception of the bacon bits)....

Savory corn-bread is not something that we eat although; it could be eaten in some places of Mexico that I don’t know of. We do prepare different types of corn-bread but they are sweet because we have tortillas instead of any bread.

Taco Bell is almost a joke....
Way many years ago, back in the early 80's, I was fortunate enough to be invited to a, then girlfriend's family reunion. I was living in Colorado Springs, and the reunion was in Alamosa, Co. I was treated to dinner by her great grandmother (90+years of age), which consisted of original homemade chili (which was clear in color). That was the best meal I ever had, and never forgot it.

I guess that helps to explain my liking of spicy foods.

One of the things that I liked living in USA was that as soon as spring was at the door, most everyone was looking for planting their seedlings for the gardens and it is such a special happiness to get fresh, organic veg from our own gardens.

Here (I live in a desertic area) we do not have the culture of gardening because veg are inexpensive and sometimes water can be a limiting factor.

Today I got:
Roma tomatoes 3 kg (6 pounds+) for $0.80 USA dollar.

My best favorite food is Mexican too but I might be biased.very happy
Second one is Italian and I would try (most) any food from any cuisine.

WOW.... 6 lbs of Roma tomatoes for 80¢ US Dollar? Damn, here in my local store is a minimum of $1.49 per lb, and sometimes a "special price" at 99¢ per lb. Wow, 6 lbs here would be anywhere between $5.94 to $8.94 PLUS 9% tax... And I love tomatoes as you remember from my other thread of the squirrels issues... Fixing to have a tomato sandwich for supper. If only they were .80 per 6lbs here! That would be 13.3 cents per lb....

Tomatoes are in season that is why they are inexpensive, besides I got the cheapest which are the smallest because I am going to grind them for different types of salsa. But there are times when they are expensive considering that we use lots of tomatoes in our cooking.

The highest price for tomatoes here that I remember was like $24/kilo Pesos which is USA dollar $0.90 per pound and it happens during the winter season.

Other element to consider in vegetables is whether they are “field” grown or under greenhouses. The first ones are better and more nutritious as well.
