Both my Mother and my GranMother (maternal side) were great cooks and every meal they prepared was just delicious, everything fresh, home made.
some dishes:
Albóndigas (meat balls) in tomato sauce with fresh marjoram. Chiles rellenos (stuffed peppers)with cheese+ some chopped onion (rested in lemon juice) Rice + vegetales with dried shrimp. Precooked chayote, cut and filled with some cheese and "capeado" (rolled in beaten egg whites+ the yolk) then slightly fried in veg oil, drained in paper towels and served with tomato sauce and herbs. Lentils with some vegetables and cumin served with some hard egg. Haba (Vicia faba) with sauté onion and some garlic with shrimps Also fish meat balls sometimes slightly smoked fish. Cubed Succhini with sauté onion, slices of poblano (roasted pepper) and corn kernels. and many many more that I do love to cook
