Chocolate 101

I love making chocolate confections. There is something about the glistening smoothness and dark rich color that brings all of my senses alive.

To make chocolate covered strawberries, first pick the freshest, plumpest, juiciest, bright red berries you can find. They must look as though they would burst in your mouth in divine splendor.

Next, find the chocolate that sings to you. I love a dark chocolate. It has to have just the right stiffness to it...a snap, yet it must melt in your mouth like the creamiest butter. The flavor ought to unveil itself as it touches your tongue and leave a slightly sweet yet bitter after taste. Depending on where the cacao was grown there will be different undertones of taste sensations hidden in the chocolate. As it melts slowly on your tongue it ought to beguile you in its complexity.

Now, once the chocolate is picked from the myriad of choices, gently melt it at a low temp. It's important to go slowly, stirring and heating the chocolate until it has melted and becomes a smooth and shining liquid. It must not be too hot as it will not envelop the strawberry in a thick coating. It must be warm to the touch and thick enough to cling to your spoon.

Once the chocolate is at its perfect temperature and consistency, gently dip the strawberry into the ready and waiting velvety dark smoothness. Undulate the strawberry in such a way as to get a good coating. Remove the strawberry from the delectable and tantalizing confection. Repeat dipping and pulling until you get the desired coating on the strawberry.

Carefully lay the finished product onto an appropriate surface for cooling. Once the chocolate has hardened, it is ready to be enjoyed in its entirety.

Today's the day.

It's rainy and windy and yes I know it's only July, but I'm going to bake my Christmas cakes. Yes plural, I've nine to do, well it was nine until I went to the shops for some bits and now it's ten. So chop chop mix mix.

Verdulagas. Or keeping Mom's memory!

When I first moved to my little apartment in Bullhead City I was amazed by the fauna. I wrote a blog on it. But I did not mention "verdulagas". The English translation is parslane and that would be an edible weed that has bulbous leaves like a succulent plant. It webs out with several runners and it has little yellow flowers.

When I lived in Colorado it grew abundantly all over the ground. People would just cut it and throw it away. Mom didn't. She picked it, cleaned it (and like spinach) she made a delicious veggie dish out of it. She would add cheese and onions with little specks of tomato. It was a wonderful dish.

I have since thought over the years how Mom took care of us. The delicious meals she cooked. The laundry she did for us. The ironing. And the love she gave us. My siblings could be somewhat mean with us younger kids and sometimes even with Mom. But Mom just loved us forever and ever.

The verdulagas growing in my front yard reminded me of Mom's love. SO, I have decided that the love must live forever. My little verdulaga plants grow with no hindrance of other weeds. They get plenty of water in this 100+ degree weather and they shall live until they flower, wilt and produce their little seeds for the next generation of my Mothers memory!

I love my little verdulaga plants! And Mom, too!!!

You're Going To Die Anyway.

My friend stop eating all flesh.
Only veggies and fruits, nuts.

He says, 'yes, am feeling so darn strong and healthy'.
I don't need to see the doctor at all.
I know I don't have any illness, no diabetes, no hypertension.
My diet heals me. It is all I need. Its my antibiotics and all.

Yes in a way, that diet is very good.
But how can you know if you still have a bad disease unless you
go to your doctor for a complete check up, at least once a year ?

He feels he will live so long and sick free on such a diet only.
Not wise to me.

Look at hypertension- its called the silent killer, because you get no signs or symptoms
most times. You just drop.

I tell him if a certain diet was good enough to cure all ailments , why does scientists
make medications. He says aah its all about making money. Lol.
Could be true. But I rather get a full check up from a doc at least once a year while eating
right.

No matter what we eat though, bottom line is death will come.
But at least see your doctor so u can prolong life, even while eating right.

Women have been known to fall on their knees, and propose marriage, after tasting some of my dishes. From the simple, to the annoyingly French, what a scene. But I usually am careful in just which ladies I decide to share my precious bodily pure essence with. Aa.
