Medsummer: Just curious why you "need" to drink coffee. Aside from it's really great fantastic flavor and delightful aroma is anything in particular?
The caffeine makes you more alert, can make your thinking temporarily sharper, helps raise your metabolism... and there's beneficial antioxidants in coffee (even in the decaffeinated variety).

I've heard that about caffeine in coffee making you more alert...can't understand why I can have a cup at night and can be asleep in a half hour

Ummm, maybe you've built up tolerance to it? Caffeine is a drug, so the body builds up a tolerance to and even minor dependance on it.
The strength of the coffee and how sleepy/exhausted you are would also factor in I guess.

There is a blend of Nestle's I think with a green cap on the jar, (instant I know...please forgive me!) where they are supposed have not roasted the beans as much as the traditional coffee. "They" say it has more of the natural ingredients left in and not burned away by the roasting. Does anyone have any info on this?
