Exotics have never interested me much - I'd rather have a small collection, cars and bikes, than one really expensive temperamental beast.
On a road course, my money would be on the Viper - they Veyron is really fast, but two tons and AWD would probably go against it in the twisty stuff...
You would have to make A LOT of modifications to get to Bugatti's 253 mph. It's not just about power. That's why all American cars suck: big engines, lots of power and no handling. All the money is put into the motor and nothing into the other components that make driving fast actually possible (unless it's in a straight line). All that power is useless if your car falls out of the next corner. In case of the Bugatti, it takes a lot of engineering to keep that power on the ground and get to that speed without taking off like an airplane. Remember, this is faster than any Formula 1 car even.
