How about an Oregon state park pass? Quite a few parks to enjoy the scenery in.
Some steaks or chicken, with seasoning, for a BBQ?
Can't go wrong with Gift Certificates . . . . now finding the proper source may be a challenge (as it may not be a store gift certificate).

Depends on how intimate you are in getting to know them with their mannerisms, likes and dislikes.
Its only the end of Oct now and you have about 2 months to find something and a lot can happen in 2 months!
If its the relationship is going light - get a general gift. Coffee mug with a gift card for a popular coffee place/chain. A book by his fave author. Calendar themed by one of his interests etc. If you keep the budget average - you'll find something not too extravagant. Thats what I have found in the past.

Hmm... if I were your boyfriend and you gave me a Christmas Stocking filled with goodies... and you wore a Santa hat whilst giving me a beautifully wrapped gift, which unwrapped would reveal some specialty coffees and something handmade... I'd be quite charmed.

Since I paint etc, I might make them something, like once I made a handmade wooden clock with a lighthouse, sky, clouds, the ocean waves etc..painted on it, and sea shells and sand (glued on the bottom "base") for a guy I met online, but due to where he lived (and other circumstances), had only seen one beach in his life, but used to talk about how he wished he could see the one near where I lived (at the time). I also made him a CD of a lot of songs I knew he liked a lot.
