possibly you have'nt found any other easy so called "recipe" ?? uh oh

Zucchini -Egg Tortilla

A mixture of beaten eggs with cooked zucchini is scrambled, spooned atop tortillas and topped with cheese. It's then baked to crisp the tortilla.

Ingredients:
2 large zucchini
6 eggs
1 cup cheese (feta, cheddar, edam)
1 Tbsp olive oil
4 tortillas
Salt and pepper, to taste

Directions:
Dice zucchini (with skin on) and saute in olive oil until tender and just starting to brown. Beat eggs; stir in zucchini, salt and pepper. Scramble the eggs in a skillet. Spoon mixture on top of tortillas on a cookie sheet, and then top with cheese. Bake about 15 minutes at 350 degrees until shell is a bit crisp.

the above serves 4, so if you are cooking just for you... you just have to lessen the amounts. I suggest you try it... its one of my favourites!

Hi Awesome, no probs, mate. All things in moderation and you'll not go wrong, jmo. The noodles I'm referring to are suitable for veggies - just beef flavoured, no meat content - but you could substitute them with some boiled vegetable, for example, swede or turnip. Just be sure to overboil the veg so that it is easier to mash. Then add the sauce to the mashed veg and proceed from there. It'll take longer to prepare but could be worth it. The Veggie Elley, love it.wave

Here's one that'll get your taste buds goin'....

"Le déjeuner, et le font Rapidement":

Select 2 delectable tins of finest tuna...
Twirl in one's fingers while perusing said label, a look of critical appraisement on your face, while your other hand strokes your moustache.....
With a deft twisting of the right and left hands, open the tins....
Select a special Migros Ready-Mix Green Bag of salad from the fridge....
Open and dump into last night's unwashed pasta bowl.....
Empty contents of can over the salad....
Add a can of peas...
Add a can of maize....
Upend a bottle of Balsamico over the lot and sprinkle while nonchalantly looking in the other direction....
Have at it with the salt and pepper mills....
A dashing of "Mix Pour Salades" herbs....
Open the plastic container with the remains of last night's pasta in it...
Throw that in too....Ask your friends to come for lunch....and to bring a bottle of wine...
Eat and be happy....

hey sorry if it sounded curt! I just wanted you to eat something more nutritious :-( it's just that sometimes when I see recipes like that I remember the old days when I would gulp down bread and jam for dinner cause it was lonely to cook just for me.

Been down that road....have to eat to stay alive but can´t be bothered cooking. One of my solutions was....

Dice an onion, chuck into a frying pan with olive oil on a lowish heat.Wander off and do something else (go on CS?) for at least 20 minutes.

When you return the onion will be dark brown, crispy and caramelised.

Open a tin of beans (only Heinz will do) and mix in the caramelised onion.

Heat and serve.

That was then.

This is now.I have a reason to cook and share beautiful meals. So it´s chicken with ginger and garlic in oyster sauce amongst other things.Thank you Fleur for rekindling my interest in cooking kiss

Another easy-to-make supper is cheese on toast.

ingredients:

-cheese - red leicester is by far the best cheese in the world for this recipe.

-sml onion. chopped into small pieces.

-2 slices bread.

-onion salt.

preprep:
1.thinly slice enough cheese to generously cover untoasted side of bread.
2.soften onion, without browning, in pan with enough butter to fry.

method:

1.toast one side of bread only.
2.place cheese on untoasted side
3.place onion pieces on cheese.
4.sprinkle onion salt over cheese and onions.
5.return to grill to melt cheese.

note: the onion salt makes this dish special. If you don't have onion salt, use sea or table salt.
