Yes these recycled jars actually do have a raised circle in the middle and after boiling the jars the raised circle is flat! Great! That means my jars have sealed properly

I've lived amongst a few different cultures... from each I gleaned different flavours that do it for me ... I often add Indian spices to preparations just because it adds a twist of something different ... In this case it goes very well with this sauce, like a hint of exotic that mixes well with any vegetables or carbs you would use for as a base or serve with just heated up from the jar.
If it's used as a base you could add more liquid (water or wine) and add a combination of diced courgette, aubergine, carrotte, mushrooms and cook on low till tender. Serve with pasta or rice or whole potatoes in their jackets.. Or add diced potato and cook till tender then serve with steamed vegetables... Or use as a dip for raw vegetables ...

here in Spain when using ordinary (sterilised) jars you turn them upside down in a huge pan of water and bring to boil... boil them for 10 min... usually it seals them … then let them cool down upside down …

Last time I didn't boil them to "seal them" … in that case they only keep up to 6 months … when they're sealed about 2 years …

I made my own tomato preserves with tomatoes and peppers from my garden!
for 3 kilos of tomatoes I added 190 ml of white wine 2 huge onions chopped 6 green peppers chopped 9 cloves of garlic 1 and half tsp of garam masala 1 and half tsp of cumin 4 tbsp. of oregano olive oil salt
Ended with 8x 250 g jars of sauce

I've been halping a friend with his appointments and translations with the oncologist for the last couple of months or so. He was really really ill and it all sounded so hopeless and then on his last test result a week ago everything was reversed and suddenly he could receive this one particular treatment that would manage the cancer allowing him a decent quality of life. Such delightful news for him, his family, our community and me. We have exhibited our art together in the past worked together on setting up exhibitions for various artists including us and his wife...
Thanks GS for clarifying some info … the particular eye op that this friend had done here in Spain he said himself that in UK it would not be performed or covered by NHS... He was the British guy who told me so... also the HOME dialysis is not very common in UK he said … The hospital delivered all the equipment to his house after they both attended a week's training to learn how to use it … special bed, special equipment to 'plug himself in' every night, all the replacements of everything needed for the administration of it … by 'being plugged in' all night at home it meant he could have a near normal life in the day time instead of spending all day at hospital (an hour's drive away) 3 times a week... again it was the friend who said that in the UK it was rare to have home dialysis back in UK …
Because many people understand words and expressions to mean something different and then you end up having a conversation at cross purposes … Sometimes the different possible meanings are used by people to stir up trouble and create bad vibes and upset others which comes as a great surprise to you I'm sure
