Ingredients

Creamy Broccoli, Chicken, and Bacon Pasta Recipe


1 tablespoon olive oil
1 lb chicken breast, boneless and skinless
salt and pepper
3 cloves garlic, minced
2/3 cups heavy cream
2/3 cups milk
1 cup shredded cheese (use Parmesan, or Mozzarella, or 4-cheese mix)
8 oz fettuccine (for gluten free version, use gluten free brown rice fettuccine)
2 cups cooked broccoli florets
7 strips cooked bacon
salt and pepper

Directions

Heat olive oil on medium-high heat in a large skillet.

Season chicken breast with salt and pepper.
Cook chicken breast on high heat for 2 to 4 minutes on each side, until browned, then remove the skillet from heat and keep the chicken covered to continue cooking it in its own steam until no longer pink.

Remove chicken from the skillet. You can also use pre-cooked chicken.

Cut chicken into thin slices.

Add minced garlic to the skillet.

Add heavy cream, milk, bring to boil. Add cheese and stir till it completely melts.

Cook pasta according to instructions.
Drain.

Add cooked pasta, cooked bacon, cooked broccoli and mix everything in.

Season with salt and pepper to taste. Top with sliced cooked chicken.

Ingredients

1 dozen hard-boiled eggs, peeled
¼ cup mayonnaise
1 tablespoon honey mustard
4 strips candied bacon, diced small
2 handfuls small cherry tomatoes, quartered
1 handful basil leaves, chopped
Chili powder to dust

Directions

Slice each egg in half lengthwise and remove the yolk. Put all the yolks in a small mixing bowl and all the whites on a platter.
Add mayo and honey mustard to the yolks and mix until well combined and sort of fluffy.
Fold in the diced bacon, tomatoes, and basil (reserving a little of the basil for a garnish)
Spoon filling into the centers of the whites. Garnish with basil and dust with chili powder.

Tuna Gringo

This is an easy hot dish that my kids love. I got the recipe from a friend who worked at a daycare. It sounds repulsive, but it's not too bad in a pinch.

Ingredients

1 can Bushes baked beans-any flavor
2 cans tuna
2 cups shell macaroni or elbow, something that the sauce can cling to
1 cup milk
2 cups shredded cheddar cheese
1 Tsp chili powder
1 Tsp garlic powder
1 TBS onion powder
salt and pepper to taste
1 bag of corn chips

Directions

Boil pasta for 10 minutes and drain
In a large sauce pan, add drained tuna, baked beans, milk, cheese, pasta, chili powder, garlic powder, onion powder, salt, pepper, and simmer for at least 15 minutes to incorporate the flavors. Stir in the shredded cheese and remove from heat. Let rest for 5 minutes before serving. Garnish with corn chips. Serves 4.

This gets better the next day, like sauces and chili does.

Slow Cooker German Potato Salad

Got this off the internet.Looked good so thought I'd try some.

Slow Cooker German Potato Salad Recipe

Ingredients

2 pounds potatoes, peeled and sliced

1 cup chopped onion

1 cup sliced celery

1/2 cup chopped green bell pepper

1/2 cup cooking oil

1/2 cup vinegar salt and ground black pepper to taste

6 slices cooked bacon, crumbled
Oscar Mayer Bacon Naturally Hardwood Smoked

Directions

Combine potatoes, onion, celery, green bell pepper, oil, vinegar, salt, and pepper in a slow cooker.
Cook on Low 5 to 6 hours. Garnish with bacon and parsley.

Notes

For easy cleanup of slowcooker before you add ingredients in slowcooker try using a liner.

Ingredients :
2 laughing eyes
2 well shaped legs
2 loving arms
2 Firm milk containers
2 nuts
1 fur lined mixing bowl
1 firm Banana
Method:

1. Look into laughing eyes
2. spread well shaped legs with loving arms
3. Squeeze and massage milk containers very gently until furlined mixing
bowl is well greased: check regularly with finger.
4.Gently add firm banana to mixing bowl, working in and out until well
creamed. (For best results continue to knead milk containers)
5. As heat rises plunge banana deep into mixing bowl and cover with
nuts,leave to soak. (preferably not overnight)
6. The cake is done when banana is soft. If banana doesn't soften repeat
steps 3 -5 or change mixing bowls.



PS:-1. If it is in an unfamiliar kitchen, wash utensils before and after use
2. Do not lick bowl after use.

Elbow or Small Macaroni(Obviously drain the macaroni but don't rinse).


Sometimes I also add a can of No Salt Added stewed tomatoes to it too.

3/4 cup shredded cheddar cheese
4 Jones Dairy Farm Dry-Aged Bacon or any kind of bacon preferred strips, cooked and crumbled
1/4 cup finely chopped onion
3 tablespoons mayonnaise or if preferred us Miracle Whip
2 tablespoons white vinegar
1 tablespoon sugar

In a bowl, combine the broccoli, cheese, bacon and onion. In another bowl, whisk the mayonnaise, vinegar and sugar. Pour over broccoli mixture and toss to coat. cover and refrigerate for at least 1 hour before serving. Yield: 2 servings.

Quick and Easy Paella

Paella is one of those recipes that can be easily cooked at home but always brings back memories of sunny holidays in Spain or Italy....

Quick and Easy Paella Recipe

Ingredients

About three cups of paella rice ( or arborio if more readily available)............ 2 pints of fish or chicken stock......(also a glass of white wine, if desired)......finely chopped large onion............3 cloves of garlic chopped........any fish of your choice preferably cod or hake which is easier to cut in large chunks that will hold their shape.......bag of frozen king prawns as fresh ones can be awfully expensive.......a large amount of fresh mussels which are inexpensive.....cup of frozen garden peas......a few threads of saffron, if available.....(overated as a flavour in my book).......lots of chopped parsley and lemon juice.....

Gently fry the chopped onion and garlic in three tablespoons of olive oil until onion is translucent........heat up the fish or chicken stock......three or four stock cubes stirred into boiling water can also be used........ pour the rice into the pan and coat thoroughly with the oil......start pouring in the stock little by little until it has been absorbed by the rice.....stirring continiously is important......at this point pour in the white wine, if using......turn heat down low and gently fold in the white fish, prawns, peas and saffron, if using........these will only take about 5 minutes to cook with the heat of the rice.......season with lots of black pepper and a little pink salt.......finally top with the mussels which should have been thoroughly de-bearded and cleaned.....discard any that have opened before adding the rest to the pan.......making sure heat is at it's lowest put the lid on and leave for about 10 minutes until mussels have opened........sprinkle with lots of lemon juice and parsley....leave the pan in the centre of your table and people can help themselves!.... Delicious!...

It's worth the bit of bother to cook this as you will be transported back to when you were soaking up the sun on your hols!!!!

Baking is one of my favourite pastimes......especially celebration cakes where I can let my imagination run wild on the decorating.....

Ingredients

For the bottom layer......20 large eggs, 20oz caster Sugar, 20oz self raising flour......grated rind of three lemons plus their juice.........for the top layer.......12 large eggs, 12 oz caster sugar, 8oz self raising flour, 4oz 70% chocolate or cocoa powder............(these quantities can be easily scaled down when making much smaller cakes).....

Directions

Beat eggs and caster sugar until thick and creamy......sieve in the flour in small batches and gently fold in.....finally add the lemon rind and juice......same applies to chocolate cake......just to mix the choc powder with the flour before folding in.......most people would probably make smaller versions so just use tins that you would normally use......larger one for the lemon and smaller for the chocolate........

Notes

The lemon cake can be drizzled with some warm melted sugar and lemon juice while still warm....when totally cooled can then be filled with raspberry jam, fresh cream and fresh raspberries......Covered on the outside with an icing of cream cheese, icing sugar, and lemon juice.....a little yellow food colouring enhances the look and lets people know that it is a lemon cake...... The chocolate one can be layered with chocolate ganache in the middle and also covered on the outside..........After all tbese basics are done you can let your imagination run wild with any sorts of decorations you fancy.......I always love to add some fresh flowers and lots of fresh fruit as decorations......
