This time of year, overwhelmed by veggies in garden. Table out front for walkers by to take some. Kale, Zucchini, raddishes, lettuce....still early for tomats.

That's how I eat them......a loads of watermelons here. Are they fruit or vegetable?
Courgettes and cucumbers are producing more than I can eat so some (mainly courgettes in ratatouille also using home grown aubergine) are been used in cooking and then frozen down for winter time and others are given away. Runner beans are starting to come into full production so some will be frozen down for winter time.

Or pumkins, Micman. Yep, northern climes, as do all, have plusses and minuses. And UF, yeah, that would suit. Tomats soon. WAY too many. This year's experiment, spaced plantings of the 50 day early girls.
I love to make spaghetti sauce with fresh tomatoes but it takes a lot and I didn't get to grow as many as I wanted. I did make a little sauce yesterday with some Campari tomatoes, oh my gosh it came out soooo good. Then I made eggplant lasagna with the sauce. I was pleased.l
Here is an old family recipe that my mother taught me to make over 50 years ago. We kids loved it. It's quick & simple to make.

ZUCCHINI COMPOTE

1 medium (about 8" by 2" ) Zucchini unpeeled.
1 large Onion.
1 large Tomato.
1 can red Kidney Beans.
1 Tbsp. oil or butter.
Salt & Pepper.

Slice Zucchini into 1/4 " thick slices. Slice Onion and Tomato. Put Zucchini, Onion and Tomatoes in a large skillet with shortening. Add Salt and Pepper to taste. Cook covered over low heat until Zucchini has lost it's white color (acquired a watery appearance). Add Kidney Beans. Remove from heat let stand a minute to allow Kidney Beans to absorb heat. Serve. Be prepared to have your tongue slap your brains out!
I've cooked that all my life but without the beans. Next time I'm fixing it with kidney beans, brilliant.

So the zucchini is the same as we call courgettes then.
