CREAMY BEET SALAD
INGREDIENTS:1 bunch or 4 large beets
3 minced garlic cloves
1/2 to 1/4 cup of mayonnaise
1 or 2 eggs (optional to thicken)
2 to 3 tablespoons of vinegar
salt and pepper to taste
DIRECTIONS:
01 - Fill a large pot with enough salted water to
completely cover the beets/egg(s) and bring to a boil!
02 - Peel and thoroughly wash your fresh beets!03 - Place beets/eggs in the boiling salted water and simmer
for: egg/s = ten minutes | beets = fifteen to thirty minutes
until tender when easily pierced with a fork or thin knife!04 - Mince garlic cloves and place in a large mixing bowl!
05 - Peel and chop the boiled egg/s and place
in the mixing bowl with the minced garlic cloves!06 - I prefer it chunky - therefore I simply chop them -
but you're free to grate/shred your cooked beets
...and mix in the bowl with the above ingredients!
07 - Add vinegar along with mayonnaise to desired
consistency and season with salt & pepper to taste!08 - At this point you're free to gently mix in any other additional ingredients to your individual preference; for example: carrots,
potato, celery, onion, green pees, prunes, wal/nuts, etcetera.
09 - As this is a cool-temperature salad,
it's recomended to cover and chill in the refrigerator
for at least an hour or two before ready to serve.10 - Enjoy, Buen Provecho, Bon Apetit... whatever!
