I mean, if there's something you are afraid of... (flying or any other action you haven't done yet)is is better to face the "problem" soon? - because some time you have to get over it.
to be frank I'll have to apply for a waiter position. I think I get on well with people, but an unknown profession in a foreign language will be tough.
is it worth to lie that I have experience in it?

What do you have to lose?
I understand that you are hesitant, but it is normal for anyone approaching a new job. Be prepared and you have to believe in yourself. The longer you let your fears linger, the less you will be inclined to go.
If you get on well with people, a requirement to be a good waiter, you will be accepted if you have a good attitude and if you are friendly. Treat your customers the way you would like to be treated.
The language part, you'll get that if you have the basics.
