Kaybee50: I have never heard of a bread-type of ice cream. Demerra sugar is simply brown sugar? If so, light brown sugar or dark brown sugar.

I eat allllll kinds of stuff in the summer. All that stuff sounds great. Quiche sounds extra creative. I love quiche and its supposed to be easy to make.

I just remembered I have a Linds McCartney recipe book full of cold vegetable soups.

Today I made a Waldorf Salad

( I found out about Waldorf salad because of an episode of Fawlty Towers.)

Diced apples
Toasted walnuts
Frozen raisins
Mayo
Lemon Juice (Keeps the apples from browning.)
Allspice
White sugar
Lettuce
A small amount of raspberry vinaigrette dressing

What kinds of things do you make in the summer as opposed to year round?


Lime and Chilli Prawns

1kg green prawn meat

3 long red chilli
1/2 cup sweet chilli sauce (recipe below)
3 limes
fresh coriander
1 tablespoon sugar

finely chop chilli and coriander, juice limes.
combine with sugar and chilli sauce and mix well

Place prawn meat in a snap-lock bag and add marinate.
Eliminate air from bag and rub mix thoroughly to cover all prawns.
Refrigerate for 1 hour, turning and mixing every 15 mins.

Cook on hot BBQ plate turning once until pink throughout.

Serve on a decorative plate as an entree. Using toothpicks to eat them.

250g hot red chilli
3 cups white vinegar
3 cups caster sugar
1 clove garlic

place chilli in food processor with 1/4 cup vinegar, chop well
heat vinegar and sugar and garlic until boiling. Add chilli mix and simmer until sauce thickens (45 mins average) stirring at regular intervals.



Enjoy my summer BBQ entree.

Last time I made this was in a 2kg batch, 25 people and they were all gone before they got cold. Even the kids were eating them and complaining that their lips were burning as they shoved another one in.

I like to make Mexican food. Enchiladas and tacos and taco salad and breakfast burritos with eggs, cactus, cheese and fake sausage, and Spanish rice and refried beans. Mmmmmmm nom nom nom nom nom! The stuff uses all the same ingredients like Cajun food. I've been meaning to make some Cajun food. My family is part Cajun, but we say "Acadian." We don't talk like the Cajun Cook at all, BTW.

i am eating alot of watermelon...since i only eat local in season fruits and veggies, i dont eat watermelon in the winter

My todays salad:

crispy lettuce
fleshy tomato cut in chunks
avocado diced
nectarine diced
sweet corn
boiled poatatoes diced
hard boiled egg cut up
fresh mushrooms cut up
tuna
hard cheese diced
dressing made of 1 fresh lemon juice + balsamic vinegar + olive oil + salt & pepper

Well, nectarine and boiled potatoes are an interesting combination in a garden salad. I like the idea of both ingredients but I would put them intwo different salads.
