Key Lime Pie
Key limes are very small and not readily found. Use a good key lime juice instead.
Pie 4 large or extra large egg yolks 1 14 ounce can sweetened condensed milk 1/2 cup fresh key lime juice (approximately 12 Key limes) ...get the best quality available (about $6.00/pint) 2 teaspoons grated lime peel, green portion only
Pie Filling Use an electric mixer and beat the egg yolks until they are thick and turn to a light yellow, don't over mix. Turn the mixer off and add the sweetened condensed milk. Turn speed to low and mix in half of the lime juice. Once the juice is incorporated add the other half of the juice and the zest, continue to mix until blended (just a few seconds). Pour the mixture into the pie shell and bake at 350F for 12 minutes to set the yolks and kill any salmonella in the eggs.
Use a store bought graham cracker crust pie shell...just as good as homemade. MMMM

OMG that sounds so good! I love love LOVE ethnic foods.
hollandgirl: Know what makes a good and cheap food too? Pea soup and it freezes beautiful.
Yes, I make that and a 16-bean mix soup quite a bit. I add minced garlic in my split pea soup. Also add that along with the onion in my bean mix soup. Do nottry the pea soup with kielbasi instead of ham, though. Just doesn't taste right. Live and learn.

If I was rich I would hire me a cook for sure. Ha and I told the wealthy guy tonight not to come around anymore. Maybe I am not that smart after all.
