jbibiza: I´m voting for the fried chicken and mash potatoes, every decent restaurant does a nice salmon, in fact Jeff can probably cook himself a nice piece of salmon... but if you make good fried chicken.... well that´s something you just don´t get everywhere...

When I was married, I would cook enough for my husband to take lunch to work. One day, he had chicken. This guy said to Michael - "Hey man, that's real southern fried chicken, right?"Michael, said "Yes". The guy said, "I mean, you're wife is from the south. That's honest-to-god southern fried chicken!" Michael said, "Yeah, and you can't have any."
Could you send me your recipe hon??...i like the sound of that...maybe I could speak in a southern drawl when I serve it to my guests....would add a touch of local flavour, wot??...
dcj22: Ahhh, but darlin, you've never had my southern fried chicken!!
Honestly, I usually don't fry much, but I do make good southern fried chicken - I leaned from the best - my mom!

It's very simple sweetheart. The key is to use skinned chicken. Then dip the chicken in buttermilk, then seasoned flour - season with whatever you want -- I always add a bit of sage, salt and pepper and poultry seasoning. Then simply fry it in melted shortening.
Makes for a very crispy, tender, and juicy chicken.
Very cool...I've never done it that way...I'm gonna try it too....
I don't know if I can get buttermilk here tho...but I'm sure there's a substitute....I've never followed a recipe from start to finish....my attention span is just not that long...

If you can't get buttermilk, put a tablespoon of lemon juice in some milk and let it sit a bit. That will do just as well.
