Fay, you may try this very simple one, too. It's called Mascarpino (not Mascarpone). For 5 liters milk you need a cup of vinegar. Don't worry, it stays in the whey and does not affect the taste of a cheese. Bring it to boil, pour vinegar when easily stirring the milk. It will curdle instantly. leave it in the form under the pressure for that day. Turn few times at that time beginning when still warm. Makes the cheese compact and nice looking. Take out of form next day, rub it with salt and store to ripen. Ideal climate would be 12 - 16 *C, with 80% air humid.

It's easy not to make assumptions and subjective judgements when not experienced bad side of blogging. I was trolled in my first weeks on blogs and evil judged and called names because I have a different lifestyle. Even a few bushing me blogs were posted, because I don't understand online mourning. Reading between the lines is good.
What's interesting for me, might be boring for you. "Some people want to control what you see. Strange isn't it ?"..... that's a paradox. However, I'm on the new blog.
