I can only speak for myself, my reasons are for ethical and economic reasons. I love and respect animals and do not wish to consume them. Economically, being Vegetarian or Vegan makes sense because it takes up to 13 pounds of grain to produce just 1 pound of meat. If people were to eat the grain itself, an entire village would be fed instead of only one family.
I am not putting down or condemning meat eaters. They have a right to eat what they want just as I do. Both my children are meat eaters and I never pressured them to convert.
Maybe it wouldn’t be for some, I can only speak for myself that it would be.
I don’t consider domesticated animals, not those gathered from the wild, to be exploited. It is a mutually beneficially arrangement as long as the animal is treated with kindness and respect.
It’s no less monotonous than eating meat. How many ways can one cook a steak? I eat EVERYTHING but meat. With all the different recipes, spices and ways to prepare produce, it doesn’t get monotonous.
It can get very expensive if you follow strict adherence to only buy organic, locally grown produce, which is more economically responsible and biologically sustainable. I, unfortunately, cannot afford, at this time, to do so.

Since I'm a vegetarian, I have to incorporate plant protein for every meal. For breakfast I make up a mix of grains and seeds, that I add mixed dried fruit to it and cook for 30 minutes. The grains and seeds are: Amaranth, Kaniwa, Millet, Teff, Hemp Seeds, Chia Seeds, Barley and Flax Seeds. After it's cooked I add a little Agave Nectar, cinnamon and mixed nuts. It is very yummy.
