Roasted pumpkin, garlic and ricotta canneloni...cut a butternut pumpkin into big chunks (leave skin on) and bake it at moderate heat in an oiled baking dish with a few garlic cloves (dont peel them). When pumpkin is cooked, remove the skin and mash it in a bowl. Squeeze the garlic cloves into the mash along with few dollops of ricotta cheese and mix thru. Put big spoonfuls of mixture onto fresh lasagne sheets and roll each one up, placing them one by one into a baking dish. Pour over a jar of your fave pasta sauce, sprinkle grated cheese on top and return to oven for about 25 mins. To die for... smitten
